of wooden spoons, and plastic forks, vases of cutlery – it’s all great fun, well laid out with most tables enjoying a good view of the open-plan kitchen.
There’s nowhere to hide in Tebbutt’s domain, and he is in-house at least two weeks out of every four. The menu boasts a good proportion of tandoor dishes – the clay oven, pride of place in the busy kitchens. Prep is open to observation too – this is a bold kitchen demonstrating Tebbutt’s confidence in his menu and team.
The menu’s mantra of Order, Share, Eat, Repeat is one worth taking on board. His menu is varied and based on a modern British angle and also draws influence from North African spices, French classics, Italian simplicity, and clean Asian flavours.
After crisp cockles and home-made bread, we enjoyed slow cooked pig’s cheeks, an absolute treat – fall-apart tender, and the Capreolous Dorset Charcuterie with marinated tomatoes, fried flatbread, and Parmesan –
the flatbread from the tandoor. This accompanied by a reasonably priced bottle of Rare Vineyards Pinot Noir at just £26. Other starters of calves’ liver and poached egg, and tandoor roasted mackerel and chermoula marinade, show diversity, which we like very much – the menu is full of choice.
Mains of turkey schnitzel (fabulous to see on the menu and quite deliciously crispy yet tender), along with roasted Creedy Carver duck breast with puy lentils salad with chicory, celeriac, and pickled walnuts, which was the best duck to date on the Enjoy tour. Guests can choose from steaks; 42-day dry aged, chargrilled fillet, or tandoor roasted rib. From the tide; roasted Lyme Bay hake, fresh mussels, tandoor roasted cuttlefish, scallops, and for a vegetarian alternative; chickpea cakes and orzo salad.
The staff are all friendly and have a chat about the hotel, restaurant, and Matt – great fun!
Desserts are a must and the Cambridge burnt cream
with honeycomb, pistachio, and raspberry is a treat, as is the espresso marquis with chocolate cream – the cheese board is a British selection – and enjoyed as we chat of Level8ight The Sky Bar. The cocktail list is fabulous and the view over Bournemouth a real pleasure at night. Great tunes, table service, and an early morning wind down.
Time for bed, a superb uninterrupted night’s sleep and then as in the words of Matt himself ...Eat, Repeat – we are back in Schpoons and Forx for breakfast before you know it, and our Hilton experience comes to an end – for now. We love this facility in Bournemouth, it’s become
a regular haunt, for the spa, bar, and welcoming friends from afar...
