After many years as the most-loved Chinese restaurant in Dorset, Ocean Palace finally closed its Bournemouth doors in 2015 and left a huge gap in the dining scene – until a vision of FJB Hotel’s MD, John Butterworth, came to fruition in June 2016.
Seeing a clear gap in the market, and as importantly missing one of his favourite eateries, John rounded up the original Ocean Palace team of head chef Ping and the well-known waiting staff, and proposed a ‘Pop-Up Ocean Palace’ in the Sandbanks Hotel.
However temporary the ‘Pop-Up’ was meant to be in principle – in practice it wasn’t an option. A year on and Ocean Palace has a permanent home in the hotel’s Compass Room on the Blue Flag beach at the front of the hotel.
With 80-covers for lunch and dinner, and these being regularly filled, the decision was made very early on to convert the kitchens and install dedicated Chinese wok facilities and... Ocean Palace rose like a Phoenix!
To celebrate its first year on the beach, and its permanent home, TV celebrity chef and inspiration to so many – Ken Hom OBE curated a dedicated menu for Ocean Palace and flew in from Paris to cook with the Ocean Palace chefs, and host ‘An Evening With Ken Hom’. His exclusive menu to be served alongside the à la carte throughout the year and boasts dishes that Ken has never cooked in the UK before. (Read more of Ken on P47).
When asked about his inspiration for the new menu Ken said: “I have curated this menu with the changing seasons in mind – dishes to fend off cooler evenings, the prawns
with honey glazed walnuts a really sweet and summery dish and it is the first time I have brought the crispy Hong Kong Shrimp paste chicken to the UK!
“I love cooking with other chefs and it has been a privilege to cook with Ping and the Ocean Palace team right on the water’s edge!”
Over 80 guests enjoyed the event and supported Action Against Hunger, Ken’s nominated humanitarian charity, (see more of this on P46), during an evening where his menu was showcased for the very first time.
